Penne with Roasted Pepper Pesto

  • 250 gr Penne Diamond
  • 55gr walnuts
  • 2 roasted red peppers cut into pieces
  • 15gr parmigiano
  • 1 small garlic
  • 60 gr basil
  • 1 tablespoon olive oil
  • 25 gr mascarpone

Roast the walnuts in a pan and transfer their halves to a food grinder, along with the peppers, parmigiano, garlic, basil, olive oil and a little salt and pepper (if the mixture is too dry add a little water). Drain the pasta, keeping a glass of water from boiling them. Add the pasta to the pan, add the pesto, mascarpone, and 3-4 tablespoons of the pasta water. In the serving, add the remaining nuts, chopping them, add basil and parmigiano.
